Receta de Pozol Tico

La receta me la enseño mi mamá, aunque confieso que nunca la seguí al pie de la letra, pero para ser honesto, nunca hice nada de lo que me pidió, al pie de la letra!

La primera ves que tuve que hacerlo, fue en San Diego y lo que me costó más fue encontrar el nombre correcto de los ingredientes, no tan comunes (al menos para mí) en inglés! Por eso los pongo en paréntesis. 

Ingredientes

  • ~ 400 Gramos (seco) de Maiz Cascado  (Hominy)
  • 2 lbs de Posta de Cerdo (Pork Roast [shoulder/loin/sirloin roast])
  • Tomillo fresco al gusto (Fresh Thyme)
  • Oregano Fresco al gusto (Fresh Oregano)
  • 1 Chile Dulce en Tiritas 
  • 5 Dientes de Ajo Picados
  • 1 cucharadita Comino (Ground Cumin (hehe))
  • Pimienta
  • 2 Cuadritos - Consome de Pollo (http://mae.cr/kgju)
  • Aceite de Oliva
  • 1/2 Cebolla Picada Fina.
Procedimiento

Dejar el maiz al menos 8 horas en agua. Lavarlo bien.

  1. Poner en agua hirviendo: el maíz, comino, pimienta, sal, aceite de oliva. Dejar a fuego medio alto por 30 minutos. 
  2. Al mismo tiempo, sudar la posta de cerdo, por aparte; con comino, pimienta, y adobe al gusto. Sudar por 30 minutos, dandole vuelta cada 7 minutos
  3. Cortar el cerdo en pedazos medianos.
  4. Añadir al maíz: el tomillo, oregano, chile dulce, ajo, comino, consome de pollo, aceite de oliva, la cebolla, y el cerdo.
  5. Dejar en fuego medio por al menos 2 horas y media o hasta que el maíz este suave. Agregar agua como sea necesario para mitigar la evaporación.
  6. Probar frecuentemente y ajustar sabores :)

Modular Zend Framework in 60 seconds or less!

The Zend Framework is, in my opinion; the quickest, easiest and more robust way to get a MVC environment running in PHP. You can get a base environment set up with a one liner. After that, you can start writing code that matters… priceless.

I’ve been refactoring one of my pet projects, mae.cr, originally written using NodeJS. The reason I’m refactoring using PHP has really nothing to do with NodeJS, but more with the available time I have right now… but I digress. 

I needed a modular MVC framework to accomplish the organization I wanted, we use something similar but much more complex at my day job. The documentation that Zend provides is really convoluted with a bunch of details that I really didn’t need and after figuring out exactly what I needed to do, it really took less than 60 seconds to accomplish.

This is the recipe!

First, you wanna create the initial skeleton, you do this using the Zend provided binary zf.

# cd /path/to/api.example.com
# zf create project .

Now we just need to clean up a few folders ZF created but we don’t need for a modular set-up. After doing this, modify the application configuration to load the module tree instead of the default controller.

# cd application
# rm -Rf controllers views models
# vim configs/application.ini

Replace the resources.frontController.controllerDirectory directory with the following value:

resources.frontController.moduleDirectory = APPLICATION_PATH “/modules”

We are ready to create new modules, create a default module and a controller with the index Action for it.

# zf create module default
# zf create controller Index 1 default

Done! You now have a working Modular MVC Framework for PHP that you can access in the form of:

http://api.example.com/module/controller/action

Make sure you are really targeting an area of differentiation that the incumbents can’t or won’t really focus on. I’m sure that the CEO’s of the big competitors have also read Tony Hsieh’s book and are trying to figure out how to deliver great service.
